Dragon Fruit Powder

Hylocereus Costaricensis

This fruit powder has a purple/pink colour and acts as a natural colourant. When rehydrated the powder becomes very pulpy and soft to touch.

Dragon fruit (also called strawberry pear or pitaya) is borne by a cactus indigenous to Central America. The fruit is oval and its peel looks like dragon scales.
