An apple a day keeps the doctor away, and a glass of the stuff is rich in malic acid: a component found in certain fruits and wines.
Malic acid is a naturally occurring chemical, also found in plums and prunes, which has a tart, sharp flavour. It intensifies flavours in the mouth, helping the essential oil blend become more effective, and giving a juicier taste.
