Millet seeds are rich in protein, fibre, silica, vitamins and minerals as well as being anti-fungal. They have a wide range of use, they can be pressed for oil, milled into flour, coarsely ground into meal, and puffed into puffed millet. The flakes are obtained by rolling the seeds.
