Anthemis nobilis, also known as Roman chamomile, is a mat-forming, evergreen perennial with aromatic, finely divided leaves. In summer, long-stalked, solitary flowers bearing yellow discs and creamy ray florets are produced.
We often use chamomile flowers as a decorative finishing touch with soothing properties. Chamomile flowers are collected when they are in full bloom and used fresh, frozen, or dried (the dried flowers keep for only one year).
Chamomile’s colouring ability is due to apigenin, a weak, non-volatile, yellow colouring matter, which acts as a weak dye. It is slow acting and needs to be applied regularly.
