The olive tree (Olea europaea) is a slow-growing and fragrant evergreen, originating from Asia. Most green olives are now imported from Spain for their culinary use and in order to produce olive oil which is widely used in cooking. Before they are distributed around the world, green olives are usually fermented in a brine solution with sugar.
