Green pistachios contain a moisturising oil, full of oleic acid, and is thought to firm and protect the skin but is mainly valued for its nutty taste and smell.

Pistachios grow on hardy trees that thrive in high temperatures and dried soils, waiting patiently for the rain to fall. The small pistacia vera belongs to the same family as the cashew and sumac (called Anacardiaceae) and despite being referred to as nuts, are actually drupes in the same way that apricots and almonds are, which explains their nickname ‘green almonds’.

The trees bear clusters of drupes and once picked up and dried, they look like the familiar pistachio we buy to nibble or use in delicious desserts, the outer shell cracking open during the drying process if we are lucky enough.
