The potato is thought to be native to the Peruvian-Bolivian Andes and was first introduced to Europe in 1534 via Spain. It was not immediately understood to be a root vegetable by all; the English first tried to cook the poisonous leaves and stems. Potatoes were cultivated in South America at least 1,800 years ago.

The tubers are made up mainly of water and starch, but they also contain vitamins, minerals and protein. They're naturally low in sodium and are easily digested.

Potatoes and their starch have been used by herbalists for various medicinal and cosmetic purposes: the plants are said to be anti-bacterial and soothing on rashes - and poultices made of cooked potatoes have been used on painful joints and to soothe skin.
