Sugar can be made from several different plants, but in the case of this golden caster sugar, it is derived from the sugar cane. The top of the subtropical plant is harvested, washed and crushed, to separate the fibres from the juice. The juice is then boiled to evaporate the water, creating a thick, dark syrup. This is boiled again until crystals form, commonly referred to as sugar, while the remaining syrup is called molasses.

The colour of sugar (from brown to golden and white) depends on how much molasses is left on the crystals - the more refined, the whiter the colour. Molasses has a caramel and vanilla-like scent, so leaving some on the sugar crystals means a more complex aroma and taste.
