Know your botanicals
The bitter orange tree (Citrus aurantium amara) is an evergreen member of the Rutaceae plant family. Although its fruits are a little too bitter to be eaten raw, they can still bring a unique flavour to dishes, drinks and cocktails. The fragrant flowers of the tree are harvested to produce orange blossom water, neroli oil and orange flower absolute. The tree is so full of essential oils that even the leaves and twigs can be distilled to obtain petitgrain oils.
