This dark viscous liquid is made during the process of sugar refining. To make sugar, the sugar cane is crushed, and the juice is boiled to evaporate excess water. This forms a thick, dark liquid which gets boiled again until solid sugar crystals are formed. Molasses is the last of the dark, sweet liquid that doesn't crystalize in the process.
