The common millet is one of the most ancient foods; known to the Ancient Egyptians, it was also the staple food of the Chinese before rice became popular.

Millet seeds are rich in protein, fibre, silica, vitamins and minerals as well as being anti-fungal. They have a wide range of use, they can be pressed for oil, milled into flour, coarsely ground into meal, and puffed into puffed millet. The flakes are obtained by rolling the seeds.
