Kombu seaweed (also known as kelp) is typically purchased in either shredded form or large, dry sheets that can be cut into various shapes. When soaked in warm water, the kombu becomes slippery and jelly-like. 

Kombu seaweed is well known in Asia, where it’s used for nutritious soups. It can be 10 feet long and form an underwater "kelp forest" in the oceans. These are recognized as one of the most productive and dynamic ecosystems on Earth.
