A by-product of corn, polenta is simply cooked cornmeal after the oil has been squeezed out of the kernels.

It has a legacy dating back to the 1700s when it was cooked in Italy. It is packed with good amounts of iron, thiamine, zinc, phosphorus and magnesium. It's also a good source of fibre.
